Salmon and Quinoa Fish Cakes

Salmon and quinoa fish cakes.

These are a little experiment and I’m not sure they quite worked 🙊

I wanted to get a ‘crunch’ on the outside of the fish cake, so used quinoa, but forgot how crumbly it becomes.

The fish cake probably would have been better without it tbh 🤷♀️

The recipe is:

🔹salmon (either fresh or tinned if you’re looking for a quick option)
🔹chickpeas
🔹peanut butter
🔹ginger
🔹coriander
🔹red onion
.
I added everything to the blender and then placed in muffin moulds.
.
Cooked for 25 mins @ 180 degrees and added sweet potato, aubergine (we have loads as I over ordered oops), sweet corn, beans and broccoli.
