Instructions
Step 1
Preheat the oven to 180 C.
OvenPreheat
Step 2
Prepare the baking dish - I used 2 smaller (lasagne portion) dishes, but you can use 1 that would be a similar size. Just make sure that the bake is not too thick - mine was around 2-3 cm.
Step 3
Mash the banana in the dish, add oats, coconut drink and mix to combine.
NOTE: You can use almond, rice or some other milk if you prefer.
Bowl
Step 4
Add the blueberries in and gently mix.
NOTE: I used fresh ones, but you can of course use the frozen ones too. Or you can switch to raspberries, strawberries or mixed berries...
Step 5
Sprinkle with coconut flakes and bake for 25 min on 180 C.
OvenHeat
Step 6
To make it somewhat crispier I decided to finish it with 3-5 min on broil and it turned out great.
NOTE: Just make sure to keep a close eye in order not to burn it.

Step 7
Let it cool for 5 min, then slice and transfer to a serving plate - it will be soft, so be gentle.
Spoon some greek yoghurt on, and drizzle a spoonful of honey on top of that and enjoy!
