Falafel with Tzatziki and Cucumber-Tomato Salad

Instructions

Step 1
Wash and dry the fresh produce.
Step 2
Remove the parsley stems and mince the leaves. Transfer to a medium salad bowl.
Step 3
Peel and mince garlic. Add to a small bowl.
Step 4
Juice the lemon into the bowl with the garlic.
Step 5
Fry or bake your falafel patties according to the directions on the packaging.
Step 6
Halve the grape tomatoes and add to the bowl with the parsley.
Step 7
Trim off and discard the ends of the cucumber. Coarsely grate 1/4 of the cucumber and add to the bowl with the garlic and lemon. Quarter the remaining cucumber and cut into 6mm thick pieces. Add to the salad bowl.
Step 8
Add yoghurt to the bowl with the garlic, lemon and cucumber. Season with salt and pepper and mix.
Step 9
To the salad bowl, add olive oil, red wine vinegar, salt and pepper, and toss to combine.
Step 10
To serve, place falafel on a plate with salad and pitta bread if liked, and serve with tzatziki sauce. Enjoy!
