1 lbground beef
½ cupchopped onion
2carrots
chopped
2cloves garlic
chopped
1 cantomato juice

3beef bouillon cubes
1 cuppearl
uncooked barley
2 Tbsparsley
½ tspsalt
½ tsppepper
2 cupsfrozen corn
5 ozFresh green beans
cut in 1" pieces, can use frozen
1 cupfrozen peas
1 cupcanned tomatoes
crushed or diced, optional
Instructions
Step 1
In soup pot, cook hamburger, onions, carrots, and garlic
Step 2
Break up chunks of hamburger until meat is no longer pink
Step 3
Drain off fat
Step 4
Stir in tomato juice, barley, parsley, salt, pepper, and bullion cubes

Bring to a boil, reduce heat, cover and simmer for 1 hour or until barley is tender. may need to add up to 1.5 cups water if soup seems dry or too thick
Step 6
Add corn, beans, peas, and tomatoes. Cover and cook for 15 minutes

Serve and enjoy!
