Step 1
Assemble all ingredients.
Step 2
Prepare all the vegetables
Step 3
Saute the curry paste in a little oil until fragrant
Step 4
Add 100 ml of the coconut milk.
Step 5
Whisk and cook out until thick.
Step 6
Add the remaining coconut milk, pumpkin, eggplant, lime leaf, palm sugar, soy and chili.
Step 7
Add the mushroom and tempeh.
Step 8
Check seasoning, add more palm sugar or soy sauce.
Step 9
Finish with sweet Thai basil just 2 minutes before serving.
