Instructions

Make filling

Step 1
Turn on oven to 425 degrees, let preheat. Grease casserole dish
Step 2
Peel and mince shallot
Step 3
Place pan over medium high heat. Put in ground meat. Break up and cook until no pink.

Add half the shallot and stir until softened, 2-3 minutes
Step 5
Stir in seasoning blend. Remove from heat and add half of BBQ sauce

Bake the enchiladas

Step 6
Place tortillas on clean working surface. Evenly divide filling and place on center of tortillas. Tuck one tortilla end under filling and roll. Place enchiladas in casserole dish seam down

Top enchiladas with cheese

Bake in hot oven until cheese is melted and inside warm, 8-10 minutes

Make corn salsa

Step 9
Halve lime. Chopped cilantro. Stem, halve, seed jalapeno peppers.
Step 10
Heat pan. Put in corn, stir occasionally, cook for 1-2 minutes.
Step 11
Add remaining shallot, jalapeno, and salt and pepper to taste

Add lime juice and cilantro
Step 13
Plate enchiladas. Drizzle BBQ sauce on top and corn salsa
