1 Tbsp butter
Instructions
Step 1
Boil the chicken until tender. Strain saving the broth and set chicken aside to cool.
Step 2
Add olive oil and onions to pan heat until fragrant, add butter then add mirepoix. Continue to cook for another 1-2 minutes. Add broth back in. Add sliced carrot chunks. Cook until almost tender. Add parsley stems finally diced. Remove chicken from bones and skin add back to pot.
Step 3
Using a heat safe colander to cook pasta in broth and strain out when finished. Fresh pasta 3-4 minutes. Set aside to combine in each bowl or combine full amount if serving the full pot.
Step 4
Turn off heat. Add chopped parsley leaves. Ready to serve with noodles.
