Instructions

Step 1
Boil together the potatoes and onions that have been sliced, using a small amount of water. Drain, and save 1 cup of water. Rub the vegetables through a course strainer.
Step 2
Melt the butter in a pan and blend in the flour. Add the 1 cup potato water and the scalded milk gradually, and cook, stirring constantly until the mixture is thickened.
Step 3
Season with salt and pepper and add the onion and potato pulp. Beat with an egg beater. Add the chopped parsley and serve hot.
