Step 1
Preheat oven to 375
Step 2
In a large pot, place sweet potatoes in cold water and bring to a boil. Boil until potatoes are fork tender, about 10 min.
Step 3
Drain the water from the pot.
Step 4
Add 2 Tbsp butter and coconut milk(away from the heat.
Step 5
Mash the potatoes in a bowl, set aside
Step 6
Return the same pot to stove on medium heat, and melt remaining butter.
Step 7
Add the onions, celery,and carrots and cook stirring for 5 mins. Add the ground meat and garlic
Step 8
Cook stirring often til meat is cooked through 7- 10 min. Season with salt,pepper,thyme, oregano. Let stand 5 mins.
Step 9
Spoon meat mixture into a 9 x 12 pan. Then place potatoes on top. Bake for 30 mins.
