Rotisserie Chicken Pho
In my family, we call this rotisserie chicken pho “emergency” pho. It’s so easy to make during the week with a Costco rotisserie chicken and it’s SO GOOD! Try it and you’ll be hooked.

Step 1
Shred the chicken off the bone. Add water to a large stock pot then add the chicken bones (all of it) Add onion, ginger, start anise, fish sauce, rock sugar, bouillion (according to package) and let this come to a boil. Reduce heat and let it simmer for 45 minutes. Taste and adjust the seasoning to your preference. If you’re buying fresh rice noodles, boil it for about 15 seconds. If dry noodles, cook according to the package instructions. Add noodles to bowl with shredded chicken. Add soup, garnishes, lime, hoisin and sriracha
