BBQ Sweet Potato Hash with Chicken Sausage

Instructions

Step 1

Preheat the oven to 425°F.

Line a large rimmed baking sheet with alu-

Place the sweet potatoes, bell peppers, onion, and corn on the prepared baking sheet.

Drizzle with the oil; sprinkle with the paprika, chipotle chile powder , salt, and pepper; and toss to coat.

Add the sausage and toss again.

Spread everything out in an even layer on the baking sheet.

Transfer the baking sheet to the oven and cook for 25 minutes, stir- ring once halfway through the cooking time, until the sweet potatoes are

Using a spatula or a spoon, create 4 small holes in the hash.

Crack the eggs into the holes.

Return the hash to the oven and cook for 6 to 7 min- utes, until the whites have set but the yolks are still runny.

(Keep a close eye on the eggs-they go from perfect to overcooked fast!)

Drizzle the whole shebang with barbecue sauce and sprinkle with the scallions.
