Step 1
Finely chop onion, garlic and ginger. Cut bell pepper in strips

Heat oil in pot, and add finely chopped onion

When onion is transparent and golden, add ginger and garlic. Stir for a few minutes

Add the rest of the ingredients, besides noodles and coconutmilk

After 10 minutes, blend the soup for 2 minutes

Add bell pepper, coconutmilk and noodles, and cook for 5 minutes - or until the noodles are done
