Instructions
Step 1
Heat olive oil in a large pot. Add onion, cook for 5 minutes till translucent. Add mushrooms.
Step 2
Add onion powder, thyme, pepper & garlic. Add in wine.
Step 3
Cook 1-2 minutes, scraping bottom of pan to release all the flavours.
Step 4
Add chicken stock and bring to boil.
Step 5
Add orzo and turn heat down to simmer. Simmer for ten minutes, until cooked.
Step 6
Take off the heat, add cheese and stir till melted & incorporated.
Step 7
Optional: Add in cream at this point for a richer creamy texture.
Step 8
Mix in parsley and top with additional for garnish.
