Instructions
Step 1
Preheat the oven to 200C.
Step 2
Touroughly wash the sweet potato and carefuly slice to 2 equally sized halves.
Step 3
Put oil on the cut side and season with salt and pepper. Rub two sides one of another to distribute everything evenly.
Step 4
Bake for around 30 min cut side up.
Step 5
Serve with avocado, tomato, poached eggs sprinkled with cayenne and optionally with some sallad asside.
