Ingredients
6 servings

2 Tbspolive oil

1 cuptri-color bell pepper
chopped

1 cupchopped onion

1 cupcelery
chopped

1.5 Tbspgarlic
pre-minced, oil-packed

1 Tbspchili powder

½ teaspoonsalt

0.5 poundkielbasa sausage
smoked, fully cooked, halved lengthwise, cut into 1” chunks
2 x 14 ozcans diced tomatoes pepper-onion seasoned
0.75 pounddeveined shrimp
medium peeled
Instructions
Step 1
Heat the oil in a large skillet set over medium high heat.
Step 2
Add the pepper, onion, celery, garlic, chili powder and salt. Stir to mix. Cook, stirring occasionally, for 5 minutes, or until the onion is golden.
Step 3
Add the sausage. Stir to coat with the seasonings.
Step 4
Add the tomatoes (with juice). Reduce heat to medium-low. Cover and simmer, stirring occasionally, for 10 minutes or until the flavors blend.
Step 5
Stir in the shrimp. Cover and simmer for 3 minutes, or until the shrimp are opaque.
