Ingredients

1 loafFrench Bread
or Sourdough
0.5 stickbutter
plus a few tablespoons more for inside
4strips bacon
diced
3cloves garlic
0.5onion
diced
0.5fennel bulb
diced
1 cupfresh Cranberry
2 cupschicken stock
or vegetable
1egg
2 sprigrosemary
chopped
2 sprigsage
chopped
1 handfulfennel tops
chopped
olive oil
salt
to taste
pepper
to taste
¼ cupparmesan
grated, optional
Instructions
Step 1
-Set your oven to 350* and line a baking tray with parchment paper.
-Cut the top 1/3 of the loaf of bread off. Dice the top into chunks and place them on baking sheet. Scoop out most of the bread from the loaf leaving just a shell of crust, the crumble the insides into large pieces roughly the same size as the diced tops. Bake at 350* until almost all the way dried out. Alternatively you can leave it out overnight to become stale, just wrap the bread bowl well so it doesn't go stale
-In a pan over medium heat, melt the butter and add the bacon. Render the bacon until it is crisp then add the onion, garlic and fennel and cook until slightly caramelized then add the cranberries and cook for 1-2 minutes until they just start to pop then place the mixture in a large bowl.
-To that bowl, add the bread, stock, egg and herbs and season well with salt and pepper.
-Rub the empty cavity of the bread bowl with a few tablespoons of room temperature butter, then fill it with the stuffing mixture
Generously drizzle it with olive oil and top with the grated parmesan cheese.
-Bake at 350* for 30-45 minutes, or just until the middle is set and top is toasty and golden brown. Allow to cool for 10 minutes before slicing and serving.
