Ingredients

1 ¼ cupsnatural cashews
pre-soaked, and drained
2 teaspoons alcohol-free vanilla extract
2 teaspoonsvanilla extract

3/4 cup (3 1/4 oz/90 g) frozen raspberries
¾ cupfrozen raspberries
1 tablespoon lemon juice
1 tablespoonlemon juice
6 drops liquid stevia
6 dropsliquid stevia
½ cupadditive-free coconut milk

Instructions

Step 1
Purée all the ingredients in a food processor until smooth. Transfer to three individual ice-cream molds or ramekins and place in the freezer for 2 hours or until frozen. Run a warm knife around the outside edge of the molds, then turn each one out into a bowl, or scoop into a dish, and serve immediately.
