Lilikoi Butter

When you can’t travel for real, travel with your food memories. Imagine enjoying tropical breakfast — spread some lilikoi butter over a slice of tender milk bread, bite, sip your hot black coffee, and exhale. It’s another beautiful summer day ahead of you. All you need is 4 ingredients — passion fruit puree, sugar, eggs, and butter. The better are your ingredients, the better your lilikoi butter taste; the cleaner will be the flavors, the silkier and creamier will be the texture. Different recipes use different ratios of the ingredients and often whole eggs. My version is adjusted to my taste, so I use less sugar, less butter, and only egg yolks. Lilikoi butter is a curd. The concept is the same as for well-known lemon curd or any other curds made with bold-flavored fruits — mainly all kinds of citrus, raspberry, blackberry, cranberry, black currant, etc. The recipe below is universal, but different types of fruit will require different amounts of sugar. In some cases, no need to add sugar at all. The rule is to make the fruity part taste pleasant to your taste first, add other ingredients, and start cooking. Serve it with a slice of fresh bread made with enriched dough — Hawaiian bread, brioche, chalah, milk bread, etc. Add lilikoi butter to your plain yogurt or drizzle it over fresh cheese like ricotta or chevre. Use it as a dressing for your fruit salads. Make meringue pastries with whipped cream and lilikoi butter.

Instructions

Step 1
Measure all the ingredients. Cube the butter. Have saucepan, whisk, bowl, fine strainer, silicone spatula, and clean jars with lids ready.
Step 2
Combine all ingredients in a saucepan and place over medium heat. Cook for a few minutes, whisking until the mixture thickens and simmer. Turn off the heat and continue whisking from time to time while the curd is cooling and produces steam.
Step 3
Strain the curd into a bowl to remove unwanted egg solids. Pour strained curd into clean jars, close the lids, let cool to room temperature and refrigerate.
