Khubeize B’ Zeit / Sautéed Malva with Onions

Khubeize in English means "Malva Parviflora or Malva Mallow Leaves". Also known as cheese-weed. Malva l Parviflora plant start pupping up in climates with mild winters, in November or December if there has been some early rain. They usually appear in neglected areas and it doesn't take long for them to start spreading in lawns and driveways, and found in many countries as well as USA, Canada and Australia. Khubeize b’ Zeit is a Lebanese tangy and savory vegan dish, steamed until tender and sautéed with onions and garlic in olive oil and finished with a drizzle of lemon juice.

Instructions

Step 1
Soak the Malva (Khubeize) in water while removing the leaves from the stems, add a little salt. Rinse it under running water and drain well.
Step 2
Heat olive oil in a frying pan over medium heat, add chopped onion and sauté for 2 minutes until translucent, then add minced garlic, pinch of salt and stir for 1 minute until fragrant.
Step 3
Add the Khubeize leaves with a little oil and water for steaming and using a wooden spoon mix now and then over medium heat, the leaves will begin to wilt and really shrink in size. (couple of minutes or until the liquid is evaporated).
Step 4
Season with salt to taste and give it a quick mix, (it takes only 2 to 3 minutes to cook so that you can enjoy its benefits without being affected by the cooking).
Step 5
To Serve; Drizzle a little olive oil and a little lemon juice on the Khubeize, and serve it with caramelized onion, pita bread and lemon wedges or vermicelli rice.
