Instructions

Step 1
Press saute on instant pot. Season pork with salt. Once machine indicates hot, add oil and let heat 30 seconds, then add 1 pound pork to pot and brown 4 minutes on each side. Remove and repeat with remaining pork.
Step 2
Add pork back into pot along with sugar, soy sauce, garlic and onion. Cook until sugar melts and pork is deeply golden in color, about 6 minutes.
Step 3
Add coconut water and scrape bottom and sides of pot to loosen any brown bits. Press cancel. Close lid and set steam to sealing, then press manual and adjust cook time to 20 minutes.
Step 4
Once cooking is complete, quick release pressure. Press cancel and open lid. Stir well.
Step 5
Press saute and let pork cook, stirring often, until sauce has reduced by 3/4, about 10 minutes. Serve not, garnished with green onion tops, over rice.
