Step 1
Cook quinoa as instructed on the packaging. Use salted water with a drop of olive oil - quinoa won't stick.
Step 2
While the quinoa cooking, cook or steam frozen peas, for 3-5 mins
Step 3
Add peas to the cooked quinoa, top with greens and chopped tomatoes and sprinkle with chopped cashews
Step 4
For the dressing - mix together apple cider vinegar, olive oil, salt, garlic powder and a few tablespoons of water
