Instructions

Step 1
Preheat oven to 375
Step 2
Melt 4 tbsp of butter in a large pan
Step 3
Dice yellow onion, sweet peppers and garlic and add to pan once butter is melted and until they are softened

Add heavy cream, slap ya mama and whisk together until mixed well
Step 5
Cut up cream cheese into blocks and add to heavy cream mix. Whisk together until cream cheese is melted
Step 6
Wash and drain crawfish tails. Add into sauce and mix together
Step 7
Add 1 cup of shredded Colby jack cheese
Step 8
Take a 9-13 baking dish and layer sauce on the bottom.
Step 9
Take your tortilla add 1/4 cup of mixture and roll. Add into baking dish on top of layer of sauce
Step 10
Once baking dish is full, should be able to fit roughly 7-8 tortillas top with remaining sauce. Then add the rest of the cheese on top
Step 11
Bake at 375 15-20 minutes uncovered until cheese is melted and slightly browning
Step 12
Top with fresh parsley and serve
