Instructions

Step 1
- Heat oil till it simmers - add onions, celery, carrots, bell peppers - add salt and pepper ( done in between each step) - cook till soften but NOT brown -add potatoes and garlic - add salt/ pepper/ red pepper - add veggie broth - bring to a boil - put on low / simmer 20 mins covered - take out two thirds of soup and blend in blender - pour back into pot - stir in milk - add peas and simmer through - add salt and pepper and red pepper - add onion salt to taste - serve with parsley and mozzarella
