Instructions
Step 1
In a large pot, sautée onions in olive oil until they start to become translucent and golden (about 10-15 minutes). While the onions are cooking have 3 cups of lentils soaking in water.
Step 2
Strain the lentils from the water and add into the pot of onions.
Step 3
Add 8 cups of water and bring to a boil.
Step 4
Let the lentils simmer on low for about 20 minutes until they change color from reddish orange to light yellow.
Step 5
Add spices and chicken bouillon to the pot and blend with a hand held blender to your desired chunkiness.
Step 6
Taste and add salt and pepper to your desired flavor. Garnish with parsley, olive oil, lemon juice and a side of pita chips.
Step 7
Optional: I like to place raw spinach in my soup bowl and add the hot soup on top. It wilts in the hot soup and adds a little texture and health benefit to your soup.
