Step 1
Chop the onion, garlic, carrot and potatoes roughly. Add the first two in a pot with olive oil and let them get translucent, 3-4 minutes. Add the potatoes and carrots and cook for another 5 minutes.
Step 2
In the meantime, wash the red lentils. Add them to the pot alongside the broth and stir. Bring to a simmer and let it cook with a cracked lid for 20-30 minutes (until everything is tender and cooked through). Blend with an immersion blender until smooth.
Step 3
Top with the butter. Make it by melting it and mixing with the paprika, chili flakes and tomato paste. Also garnish with parsley and optionally some lemon!
