Instructions

Step 1
Preheat oven to 375F, line a baking sheet with foil, poke each potato with a fork and rub olive oil and salt on each potato.

Bake for 45 minutes to an hour until fork tender. Set aside and let cool.
Step 3
Cook bacon, let cool then cut into bite-size pieces.
Step 4
Cut each potato in half and scoop out the insides, place in a bowl or bowl with a stand mixer.
Step 5
Add in crumbled bacon, butter, sour cream, ranch seasoning, and milk. Mix well.
Step 6
Scoop potato mixture back into each potato half and top with sliced cheese.
Step 7
Bake for 15-20 minutes, until cheese is melted and golden brown.
Step 8
Top with scallions and optional ranch and sour cream. Enjoy!
