Beef Chilifry (Sauteed Meat & Vegetables)
I remember my first time making chilifry I was about 13 years old, my parents went out to run some errands and they kept me in charge of my brothers and sisters. Being the oldest it was one of my responsibilities. My mom said when she comes home she’s going to make dinner, she had taken some beef out to thaw. As soon as they left I ran into the kitchen and made chilifry. I remember watching my mom make it a couple of times so I remembered what she put in it. I made it! When they came home they were so happy I cooked dinner. My dad took his first bite of the chilifry with some kurdish bread and said it’s amazing, it’s better then moms haha It made me so happy, I know my food will never compare to my moms but it put a smile on my face. Here is how I make it it’s simple but full of flavor, you can enjoy it with some bread, rice or bulgur.

Instructions
Step 1
1. Cut your choice of beef or lamb into thin bite-size strips.
Step 2
2. Put a pan on high heat add in the meat give it a quick mix cover and let it cook for about 10 minutes. No need to add water The liquid will come out from the meat.

3. Add olive oil sauté the meat in the oil for about a minute, then add in garlic, onion, red and green bell peppers. Season it with the spices, give it a good mix and let that sauté for about another minute.

4. Next mix in 2 tablespoons of tomato paste and four tomatoes sliced, give everything a good mix, cover and let it simmer on medium to low heat for about 10 minutes.
Step 5
5. If it looks dry, you can add in about a half a cup of water or chicken/beef broth, you might not need it. The liquid will come from all the veggies and tomatoes, but just in case if you want it a little Saucier.
Step 6
6. After it’s done, garnish it with some parsley and enjoy it with some kurdish bread, over some rice or bulgur.
