Ingredients
4 servings
4vegan sausages
15 ozcanned black beans
rinsed
15 ozcannelini beans
canned, rinsed
2yellow onions
small, diced
4stalks celery
5 clovesgarlic
kinda chunky chop
2 tspchili powder
½ tspRed pepper flakes
1 ½ tspsmoked paprika
2bay leaves
2 tspdried thyme
½ tspcayenne pepper
avocado oil
2 cupswhite rice
uncooked
3 cupsvegetable stock
2 cupswater
Salt
pepper
vinegar
to taste
Instructions
Step 1
1. Slice vegan sausages into 3mm rounds
Step 2
2. In a large pot, heat avocado oil over medium heat.
Step 3
3. Sautee sausages until lightly browned on both sides. (Stir frequently, about 8 minutes.)
Step 4
4. Add diced onions, sliced celery, and chopped garlic. Continue cooking until onions are translucent (4-6 minutes). You may need to add more avocado oil to avoid burning.
Step 5
5. Add all spices, 3 cups of veggie stock, 2 cups of water, and all the beans.
Step 6
6. Return to a boil, then cover on medium-low heat for 1 hour. Check in and stir every 10-15 minutes. May need to add more water eventually. This starts out very watery, but will evaporate and thicken.
Step 7
7. After 1 hour, rinse and cook your rice.
Step 8
8. When the rice is done, so is the beans and sausage.
Step 9
9. Serve beans on top of rice. Goes well with vegan cheese and vegan sour cream.
