For the Brown Butter Shallots
For the Casserole
1 lbgreen beans
10 ozshiitake mushrooms
or crimini
4 Tbspbutter
1yellow onion
small dice
5 clovesgarlic
¼ call purpose flour
2 ½ cwhole milk
½ tspfresh thyme
salt
to taste
pepper
to taste
1 tspparsley

Instructions
For the Brown Butter Shallots
Step 1
Melt the butter in a sauce pot and fry the shallots. Once the butter starts to foam and your shallots are golden brown, strain it. Hit it with salt right away and you've got brown butter shallots.
Step 2
Save the strained brown butter in a deli cup for later. It's perfect on top of Chef Brandon's mashed potatoes!
For the Casserole
Step 3
Preheat oven to 350°F.
Step 4
Bring a pot of salted water to a rapid boil and blanche the green beens until crisp; about 3-5 minutes. Transfer to an ice bath.
Step 5
Add the shiitake mushrooms to a food processor and pulse until mushrooms are finely chopped, but not puréed.
Step 6
Get a hot pan going with some oil and add your mushrooms. Add a little bit of salt to pull the water out of the mushrooms. Once the mushrooms release all of their water and start turning golden brown, add butter.
Step 7
Add the onions and cook until translucent. Add the garlic and thyme. Once the garlic is cooked out add the flour. Once the flour is blonde, add the milk and season with salt and pepper. Stir to combine and cook until slightly thickened.
Step 8
Add green beans to mixture and transfer to a baking dish. Cover with aluminum foil and bake at 350°F for 30 minutes.

Optional -- If you want to be extra, like Brandon, half and fry some king oyster mushrooms in oil with butter, garlic, and thyme. Remove to drain on a paper towel and immediately hit it with some salt.
Step 10
Top finished casserole with freshly chopped parsley, optional king oyster mushrooms, and fried brown butter shallots.
Step 11
Eat the whole thing.
