Caramelized Brussel Sprouts

Instructions

Step 1
Cook the Brussels sprouts in salted boiling water for about 3 to 4 minutes. Transfer the sprouts to the ice-water for 10 minutes. Drain and halve lengthwise.
Step 2
In a large iron skillet, over high heat, add olive oil. Add the mushrooms and cook for about 2 minutes. Remove mushrooms from the pan, and set them aside.
Step 3
In the same skillet, over high heat, place the Brussels sprouts, cut side down; season with salt and pepper, and cook until brown, 5 to 7 minutes.
Step 4
Add garlic, butter, sherry wine, sherry vinegar, and cook for about 2 minutes.
Step 5
Add mushrooms, dates, honey, and mix well. Add salt and pepper as you like.
