Instructions

Step 1
Heat the oil in a large heavy-based frying pan.
Step 2
Cook the lamb and shallots over a high heat for 2-3 minutes until golden.
Step 3
Add the courgettes and stir-fry for 3-4 minutes until beginning to soften.
Step 4
Add the spices and toss well, then add the peppers and garlic.
Step 5
Reduce the heat and cook over a moderate heat for 4-5 minutes until the peppers start to soften.
Step 6
Pour in the stock and stir everything to coat.
Step 7
Add the tomatoes, season, then cover with a lid and simmer for 15 minutes, stirring occasionally, until the veg are tender.
Step 8
Stir through the coriander to serve.
