Base Stock
3 tbspsoil
6green Cardamoms

1stick cinnamon
4bay leaves
8cloves
1onions
Large, finely sliced
1 Kgdiced beef
Blade, Chuck, Stewing Steak, Topside or Rump
2tomatoes
medium, sliced or chopped
Veges
2potatoes
medium, peeled and cut into chunks
4carrots
big, peeled and cut into chunks
12onions
small, optional - these are raw onions usually used for pickling

Base Stock
Step 1
Heat oil in saucepan over medium heat and add onions, cardemons, cloves, cinnamon and bay leaves. Stir occasionally.
Step 2
When onions turn golden brown. Add beef and continue to stir occasionally until changes colour.
Step 3
Add tomatoes and continue cooking till tomatoes disintegrate (mashed).
Step 4
Add half a cup of water and stir to ensure it doesn't stick to the bottom. Bring to boil, then cover and continue cooking on low heat till meat is almost soft (usually about 10 minutes).
Veges
Step 5
Add potato, carrots, pickle onions and enough water to cover all the ingredients.
Step 6
Increase heat and bring it to boil. Then reduce heat at simmer for 10 minutes.

Add peas and cook for 5 minutes.

8. Check to ensure all veggies are cooked.

9. Add more water if needed.

10. Add salt and stir.

11. Thicken stew with cornflour (which has been dissolved in water).
