Instructions

Step 1
Combine flour, salt and water; gradually add yeast, then mix until dough is formed. Knead for 10 minutes, form into a ball then rise for 30 minutes.
Step 2
Knock back and stretch out dough, divide into two and form into balls. Rise for 30 minutes. Preheat oven to 220°C
Step 3
Season passata with salt and pepper, stir in 1 tablespoon of extra virgin olive oil
Step 4
Spread each piece of dough into a round shape with a border, drizzle a little oil on each base, spread tomato mixture evenly, sprinkle with Parmesan, top with mozzarella, sprinkle on a pinch of salt and drizzle a little oil on top
Step 5
On one, add a few basil leaves. Top the other with Prosciutto. Bake for 8-10 minutes
Step 6
Toss rocket in a little extra virgin olive oil and lemon juice
Step 7
Remove pizzas from oven, apply pepper, top Parma ham pizza with rocket and serve immediately
