CHOCOLATE AND CRANBERRY ENERGY BALLS
I love the taste of sesame, and the intense flavour of tahini is the perfect addition to these little energy balls, which have a fantastic nutty quality Rolling them in cocoa gives them a luxurious appearance-like posh chocolate truffles and adds a lovely bitter-sweet edge.

Instructions
Step 1
1 Cut the dates in half and place in a small heatproof bowl. Pour on the boiling water, cover and leave to soak for 10 minutes.
Step 2
2 Put the rest of the ingredients into a food processor Drain the dates in a sieve over a bowl to save the water. Add the dates to the food processor and pulse until well combined. If the mixture is too dry, add a little of the date water and pulse again.
Step 3
3 Divide the mixture into 20 balls, each a bit larger than a golf ball. Roll each ball well, then roll in cocoa powder to coat lightly, Dust off any excess cocoa.
Step 4
4 Place on a tray and refrigerate for 1 hour before serving. Store any uneaten energy balls in the fridge and eat within 10 days.
Step 5
VARIATION For a crunchy-textured finish, roll the energy balls in 30g roasted mixed white and black sesame
Step 6
seeds instead of cocoa powder.
Step 7
TO FREEZE Freeze the energy balls on a baking tray so they don't stick together, then transfer to a container. Defrost in the fridge.
