Step 1
In a large pan, cook the chorizo slices. Add in the chopped tomatoes, tomato paste, sugar and garlic. Simmer for 5 minutes. Reduce the heat to low and add in the sour cream, paprika, salt, pepper and parsley.
Step 2
Bring a pan of water to the boil and cook the gnocchi. Once cooked, add the gnocchi to the previous sauce pan. Reserve 1/2 cup of the pasta water and add this to the sauce pan and mix together well.
Step 3
Pour mixture into an over dish and grate over the cheese. Bake for 10 minutes on a 200C heat.
