Instructions

Step 1
Dice peppers, onion and carrot. Add olive oil to Dutch oven and sauté diced vegetables until soft. Add in wine to deglaze, then stir in chicken stock, garlic powder, salt & pepper to taste. Bring to boil, then reduce to simmer and let cook for 20-30 minutes. Using an immersion blender, blend until smooth. Add cooked quinoa, stir and serve.
