Preheat oven to 400*F

Brush the souffle ramekins with butter and then sugar, sprinkle all up the sides to make a coating - this prevents the souffle from sticking
Step 3
Separate egg whites from yolks in two separate bowls
Step 4
in the yolk bowl add 2 tsp sugar, flour, salt, and the cheeses, mix until smoothish and combined
Step 5
in the egg white bowl, with an electric mixer, mix the whites until stiff peaks form.
Step 6
Gently fold the egg white peaks into the yolk batter.
Step 7
Fill each ramekin to the top lip and bake for 12 minutes until puffed and browned. Serve immediately.
