Step 1
Cook bacon in a sauté pan over medium heat to desired crispiness. Chop and set aside. Preheat grill to medium.
Step 2
Whisk eggs and add diced vegetables. Bend edges of the pita to create a bowl.
Step 3
Brush both sides with olive oil and place on the grill, dome side down. Cook for 30-60 seconds or until golden and then flip.
Step 4
Pour egg mixture into the pita. Cook for 1-2 minutes or until eggs are nearly cooked.
Step 5
Add chopped bacon and cheese. Cook until cheese is melted. Serve and enjoy!
