Ingredients

1 cupfresh mango
diced
1 cupred bell pepper
diced
¼ cupjalapeno
seeded and minced
3 Tbspfresh cilantro
chopped
2 Tbspgarlic
minced
¼ tspground cumin
3 Tbspfresh orange juice
2 Tbspfresh lime juice
1avocado
peeled and chopped
½ cupmayo
8 ozspanish chorizo
thinly sliced
1can black beans
drained and rinsed
8 oztortilla chips
1 ½ cupsmanchego
shredded
1 ½ cupsmonterrey jack
shredded
Instructions
Step 1
Preheat broiler with rack 6 inches from element.
Step 2
For the salsa, combine mango, bell pepper, jalapeno, cilantro, garlic, and cumin in a bowl. Add orange and lime juice; season with salt and pepper to taste.
Step 3
For the avocado mayo, blend together avocado and mayo in a mini food processor until smooth; season with salt and black pepper.
Step 4
Cook chorizo in a nonstick skillet over medium-heat until slightly crispy, 3-5 minutes. Remove chorizo from the pan using a slotted spoon; drain on paper-towel-lined plate.
Step 5
Cook beans in chorizo drippings in same skillet over medium heat until heated through, 1-2 minutes.
Step 6
Arrange half the tortilal chips on a baking sheet. Top with half the avocado mayo, chorizo, beans, and cheese. Repeat layering until all ingredients are used up. Broil nachos until cheese melts, 1-2 minutes. Top with salsa and serve immediately.
