black bean taquitos

easy and cheap meal idea that only needs three main ingredients (black beans, cheese, and corn tortillas). good meal idea for families, kids, college students, or anyone on a budget! also good for keeping in the freezer after baking and then just reheating at a later time :)

Instructions

Step 1
preheat oven to 420 degrees F.
Step 2
drain and rinse the can of beans. add rinsed beans into a medium sized microwave safe bowl. microwave to heat up beans in increments of 30 seconds. between every increment, use a masher to work beans into a paste gradually.
Step 3
add seasonings listed above or your own favorite seasonings for beans to taste. (you want the bean mixture to be more like a paste or else it will all run out of the taquitos during baking)
Step 4
mix in the 1/4 cup of cheese into the bean mixture.
Step 5
warm about three corn tortillas wrapped in a paper towel for 30 seconds in the microwave (you want them to be soft when rolling the taquitos or else they will break).
Step 6
take about 2 tablespoons of the bean mixture and roll into a taquito. add each taquito onto a baking sheet sprayed with nonstick spray.
Step 7
continue rolling taquitos until you finish the bean mixture.
Step 8
bake for about 20 minutes, rolling the taquitos over 10 minutes in.
Step 9
enjoy with a side of guacamole, sour cream, or salsa!
