Instructions

Step 1
Preheat the oven to 450°F.
Step 2
In a large bowl, combine the Brussels sprouts, garlic, olive oil, oregano, salt, and pepper. Mix to coat the Brussels sprouts evenly. Using a slotted spoon, transfer the Brussels sprouts to a rimmed baking sheet, leaving the garlic oil in the bowl. Roast the Brussels sprouts for 15 minutes, stirring once or twice during cooking.
Step 3
Move the Brussels sprouts to make room for the salmon fillets on the pan. Drizzle the salmon with the reserved garlic oil, cover each fillet with a slice of lemon, and return the pan to the oven for 10 to 12 minutes, until the salmon is cooked through.
