1chicken
whole, organic, pasture raised
2garlic cloves
1 Tbsextra virgin olive oil
½ tspsea salt
⅛ tsppepper
1lemon
sliced
1 Tbsapple cider vinegar
2 Tbsbone broth

Instructions
Step 1
Preheat oven to 375.

Step 2
Place chicken on clean surface and cut slips in skin, then press into each slit some of the garlic. Drizzle with olive oil, Sprinkle with salt and pepper and rub seasonings in. Insert lemon into cavity.
Step 3
Set chicken in baking dish, pour vinegar and broth in bottom of dish. Roast for 1 hour 30 minutes or until internal temp is 165.
Step 4
Let cool before removing the meat from the bones. Save bones to make gut healing broth.

Add bones into slow cooker.
Step 6
Add water, vinegar. Cook for 24 hours on low. Strain.
Step 7
Keep in refrigerator one week.
