The most important thing to remember in this recipe is to remove as much moisture as possible. By puncturing the skin I’m allowing moisture to escape, the baking soda helps make crispy bubbles and the foil protects the meat from burning.

Instructions
Step 1
Blanch the skin side down only for about 5 minutes, then puncture the skin with a skewer.
Step 2
Season the meat side with salt and brown sugar, wrap a protective layer of foil around the meat leaving the skin exposed.
Step 3
Brush the skin with vinegar and baking soda, cover with coarse salt and bake at 375F degrees for 40 minutes, remove salt and broil for 10 minutes.
