Instructions

Step 1
Cut the fresh pork belly into thick slices, then into bite-sized pieces. Thinly slice one piece of ginger. Bring a pot of water to a boil, add the ginger and pork belly, and blanch for 5 minutes. After 5 minutes, drain and discard the ginger and water.
Step 2
Cut the small onion into quarters. Slice the green onions in half and thinly slice another piece of ginger. Prepare 10 cloves of garlic. If you want a spicy flavor, add dried chili peppers or pepperoncino.
Step 3
In a large bowl, mix 2 cups of water, ½ cup of soy sauce, ½ cup of sugar, ½ cup of cooking wine, a pinch of black pepper and stir everything together.
Step 4
Pour the sauce into a pot and add the blanched pork belly and vegetables. Cook uncovered on high until it boils. Then, cover, reduce to low heat, and simmer for 30 minutes. Tip: After 15 minutes, remove the vegetables and skim off excess fat for a cleaner flavor, then cover and simmer for another 15 minutes.
Step 5
Blanch the trimmed green beans in salted boiling water for 6 minutes, then drain. Thinly slice the red onion. Heat 1 tablespoon of oil in a pan over high heat. Add the red onion and stir-fry until it becomes translucent. Add the green beans and stir-fry for 1 minute. Season with two pinches of salt and a pinch of black pepper, and stir-fry for one more minute. Transfer to a plate.
Step 6
Once the pork belly is ready, the sauce will be thick, and the meat tender. Serve over warm rice, sprinkle with sesame seeds, and garnish with sliced green onion. Enjoy with stir-fried green beans for a perfect meal!
