Instructions
Step 1
Warm olive oil; add sliced peppers and onions and sauté until soft.
Step 2
Cook peas to desired doneness and add to pan. Add a tbsp or two of water if needed. Add cooked chicken, cut in small pieces to pan as well. Add balsamic vinegar and stir. Sprinkle with thyme or parsley. Serve adding salt and pepper to taste. I like with a pita and hummus on the side. Nice served over rice as well.
