Instructions

Step 1
Arrange a rack in the middle of the oven and heat
Step 2
the oven to according to package instructions for
Step 3
the waffle fries, usually 425°F. Line a rimmed
Step 4
baking sheet with parchment paper.
Step 5
Finely chop 1 small yellow onion and 2 garlic
Step 6
cloves. Drain and rinse 1 can black beans.
Step 7
Melt 1 tablespoon unsalted butter in a large
Step 8
saucepan over medium heat. Add the onion and
Step 9
1/4 teaspoon of the kosher salt. Cook until
Step 10
softened, stirring occasionally, 5 to 6 minutes.
Step 11
Add the garlic and cook until fragrant, 1 to 2
Step 12
minutes. Add 2 tablespoons chili powder, 2
Step 13
teaspoons ground cumin, 1 teaspoon ground
Step 14
coriander, 1/2 teaspoon chipotle chili powder, 1/2
Step 15
teaspoon dried oregano, and 1/4 teaspoon
Step 16
cayenne and stir to combine. Cook for 1 minute.
Step 17
Push the onion and spice mixture to one side of
Step 18
the pan. Add 1 pound ground beef to the other
Step 19
side, breaking it up into pieces as you add it to the
Step 20
pot. Sprinkle the beef with the remaining 1/4
Step 21
teaspoon kosher salt and cook undisturbed until
Step 22
the meat begins to brown, 3 to 4 minutes. Stir the
Step 23
onions into the beef, breaking the meat into small
Step 24
pieces. Add 1 tablespoon tomato paste and cook,
Step 25
stirring constantly, until darkened in color, 3 to 4
Step 26
minutes.
Step 27
Pour in 1 (8-ounce can) tomato sauce. Fill the can
Step 28
about halfway with water and add the water to the
Step 29
pan. Stir to combine, scraping up any stuck
Step 30
pieces from the bottom of the pot. Add the beans
Step 31
and 1 1/2 teaspoons soy sauce. Reduce the heat
Step 32
to maintain a simmer while you prepare the fries
Step 33
and the cheese sauce.
Step 34
Place 1 (24-ounce) bag frozen waffle fries on the
Step 35
baking sheet in an even layer. Bake according to
Step 36
package directions, flipping the fries halfway
Step 37
through. If the fries don't look crisp enough after
Step 38
the indicated cooking time, continue baking a few
Step 39
minutes longer until crisp and browned in spots.
Step 40
Meanwhile, make the cheese sauce.
Step 41
Shred 4 ounces sharp cheddar cheese on the
Step 42
large holes of the box grater (about 1 cup) and
Step 43
reserve for topping the fries. Shred 8 ounces
Step 44
sharp cheddar cheese (about 2 cups) for the
Step 45
sauce, place in a medium bowl, add 1 tablespoon
Step 46
cornstarch, and toss to combine.
Step 47
Heat 1 cup heavy cream in a small saucepan over
Step 48
medium heat until bubbling around the edges.
Step 49
Add the cheese and cornstarch mixture. Reduce
Step 50
the heat to medium-low. Use a small whisk or
Step 51
spatula to stir until cheese is melted. Add 1
Step 52
teaspoon yellow mustard, 1/2 teaspoon onion
Step 53
powder, 1/2 teaspoon smoked paprika, 1/4
Step 54
teaspoon garlic powder, and 1/8 teaspoon kosher
Step 55
salt and stir to combine. Reduce the heat to the
Step 56
lowest setting until ready to use, stirring
Step 57
occasionally to prevent the bottom from
Step 58
scorching.
Step 59
When the fries are ready, remove from the oven.
Step 60
Sprinkle with the reserved 1 cup cheese and bake
Step 61
until the cheese melts, 2 to 3 minutes.
Step 62
Remove from the oven. Spoon the chili over the
Step 63
fries, then drizzle some of the cheese sauce on
Step 64
top.
Step 65
Garnish with scallions, white onion, and sour
Step 66
cream.
Step 67
Serve immediately with the remaining cheese
Step 68
sauce on the side.
