Instructions
Step 1
Combine the flour mixture in one bowl, set aside.
Step 2
Beat the eggs in a separate bowl, set aside.
Step 3
Combine panko bread crumbs and shredded coconut in a third bowl.
Step 4
Dredge each shrimp first in the flour mixture, then in the eggs and finally dredge in the panko and coconut.
Step 5
Heat oil over medium heat for a few minutes until hot. Cook prepared coconut shrimp 1 - 2 min per side until light brown. Remove and place on paper towel lined plate to soak up excess oil.
Step 6
