Step 1
Preheat oven to 350. Spray cookie sheets with cooking spray or line with parchment paper. Dry pumpkin by placing pumpkin puree on plate and placing paper towels over and repeat 3 or 4 times to get out moisture. Set aside 1/2 cup puree.
In small bowl, combine dry ingredients. Beat butter and sugar till light and fluffy. Beat in egg yolks and vanilla. Beat again. Add pumpkin, mix well. Use 2 tablespoon scoop and roll dough in ball and roll in sugar mixture. Place on cookie sheet 2 inches apart and bake 12 to 14 minutes. Tops will puff. Cool 5 minutes on rack. Cool completely 15 minutes before eating. Tops will deflate and look wrinkly.
