Instructions
Step 1
combine water and yeast and wait for it bloom (3min) [not necessary if using a starter]

combine flour and salt
Step 3
mix all ingredients together in mixer until dough is shaggy (speed 4; 2 min) add small amount avocado oil (1-2 tbsp)
Step 4
let dough rise minimum 2-4 hours (overnight ok too): add avocado oil and flour to handle and fold dough into a loaf [fold dough twice or more with spatula]
Step 5
pre-heat 425°F with dutch oven inside oven.
Step 6
add dough to hot dutch oven. bake 30 minutes remove lid and bake 15 minutes. (45 total minutes)
