olive oil cooking spray

2 tablespoondark brown sugar
packed

¾ cupcreamy peanut butter

2 tablespoontoasted sesame oil

½ cuplow sodium soy sauce

2 tablespoonsriracha sauce

2 tablespoonrice vinegar

½ cupwater
warm

2 tablespoonlime
freshly squeezed

2 bunchesbroccolini

1.5 poundsboneless skinless chicken breasts

Instructions
Step 1
Preheat oven to broil (high), with rack 4 inches from the heat. Spray a sheet Pan with cooking spray.
Step 2
Whisk together brown sugar, peanut butter, sesame oil, soy sauce, Sriracha, vinegar, water, and lime juice in a medium bowl until smooth.
Step 3
Split sauce into two bowls: one will be used to coat the food, and set aside the other as a dipping sauce for later.
Step 4
In one batch, rub the broccolini and chicken with the peanut sauce to a thickly coat, and arrange them in a tight single layer on the prepared pan.
Step 5
Broil for 10-12 minutes, keeping a close eye on the pan to prevent burning. Flip the chicken halfway through. Broccolini should be well charred.
Step 6
Serve hot from the oven. Top with sauce to taste.
